I don't think anyone else has a prestige class in mind, but i could be mistaken. The woman we're guarding is a priest which may mean healing is easy to come by AFTER an adventure but not during. I'm not sure...

Monk or priest would be fine. if you don't want to be affiliated with the powers that be that would be fine, but that would come with it's own problems. And the NPC you will be with is a priestess. While I don't see her being with the party indefinitely, I don't see her leaving for a while. I don't want anyone feeling an NPC is stealing their thunder if I can avoid it.
If there are goods going from A to B there will be people trying to waylay said goods, as well as people helping them on their way. 1/2 elf would be fine. 1/2 orc was out because I don't plan on having orcs. Please consider though, why would a NG priestess choose a pirate as a companion? I'm not saying no, you are going to have to sell it though.

The normal cost buy limited ranks sounds good, a fighter can learn to pick locks, but not to excell at it.

I think it needs to be the more generic "Skills which can be used untrained" rather than "which you can use untrained". There are several feats (Jack of All Trades PH II and Elf Dilettante Races of the Wild leap to mind) which allow "you" to attempt skill rolls with even skills which normally require that you be trained.
Beyond that, I don't see any issue. Characters typically find it hard to get all the skills they need anyhow. I think you might see some shift away from Knowledges, but maybe not. At any rate, I think those universal skills should be purchasable at 1 pt/rank, but limited like non-class skills in terms of number of ranks.

There is something I forgot to get opinions on. It class/cross class skill arrangement always annoyed me. I was thinking about some "'universal" skills. Mostly for simplicity sake if you can attempt it untrained you can use it as a class skill. A fighter that is able t6 spot an ambush will live longer, and why would a rogue have difficulty riding? Getaway anyone? Knowledge and language are some others that don't make sense. Or would this water down some classes? Rogues for example being skill oriented. But then the skill oriented classes get more points. Thoughts please?
